Located in downtown Fullerton, Pickled Monk brings a fresh approach to the gastropub experience through a combination of craft beer, cocktails, and a unique self-service concept. Developed with owner Tim McCune, the 3,000-square-foot space transforms the evolution of his original beer vending machine concept into a full-scale hospitality destination.
The design integrates a self-serve taproom alongside a dedicated cocktail bar, creating a flexible environment that encourages exploration and social interaction. The space balances the casual atmosphere of a neighborhood pub with the energy and sophistication of a contemporary dining destination.
Through thoughtful planning and collaboration, Herman Architects helped bring this innovative concept to life, creating a memorable gathering space that reflects the brand’s creative origins and downtown Fullerton’s evolving character.
